Single Skillet Sausage and Veggie Stir Fry

A One Skillet Sausage Stir Fry is a simple, tasty one-pan meal that combines crisp vegetables and savory sausage, making for a satisfying meal with little cleanup. Ingredients:

  • One pound of sausage
  • One tablespoon of cooking oil, such as olive oil
  • 1 sliced bell pepper
  • One sliced onion
  • One sliced zucchini
  • 1 cup of broccoli florets
  • Two minced garlic cloves
  • One tablespoon of soy sauce (or, if gluten-free, tamari)
  • One tablespoon of apple cider vinegar or rice vinegar
  • To taste, add salt and pepper
  • Red pepper flakes for added spiciness

Instructions:

  1. Add one tablespoon of olive oil to a skillet and heat it over medium heat.
  2. If necessary, remove the sausage from its casing and break it into the pan.
  3. Cook until browned and well done, breaking it up with a spoon. Take off the skillet and place it aside.
  4. If necessary, add a little additional oil to the same skillet.
  5. Add the bell pepper, zucchini, and onion. Stir-fry until they start to soften, about 5 to 7 minutes.
  6. Then, add the garlic and broccoli. For a further three to four minutes, stir-fry the vegetables until they are crisp-tender.
  7. Put the sausage back in the skillet after cooking. Pour in the vinegar, hoisin sauce (if using), and soy sauce. To coat everything evenly, give it a good stir.
  8. If preferred, add red pepper flakes along with salt and pepper for seasoning.
  9. Serve warm. For a more substantial supper, serve the stir fry over noodles or rice.
