Shrimp-stuffed “sushi” boats are fun, fresh, and super easy to make! 🍣
Start by throwing 1/2 cup of rice with 1 cup water in your rice cooker. (Second day rice works best, but chilled same day works too). I got the cutest little mint green 2 cup rice maker bydash and I’m in love! Trying to resist the urge to make more and more rice just because it’s cute and fun!
Slice 2 long English cucumbers lengthwise and scoop the seeds out to hollow the center.
Take 1 pound thawed fully cooked shrimp. Remove excess water and slice into small pieces. Toss in spicy mayo (I used spicy yum yum sauce).
Chop up 1/2 an avocado and some fresh cilantro.
When you’re ready to assemble, layer on rice, shrimp mixture, avocado, and cilantro. Top with anything else your heart may want and enjoy!
