  1. Cut all of your vegetables into cubes that are at least 1 cm in size.
  2. Combine 1 tsp olive oil with chopped vegetables.
  3. Place on a cookie sheet in a single layer.
  4. Bake at 400 for 25 minutes, then take out and put aside.
