Recreated a dish I’ve had at a Thai restaurant.
It was called peanut bomb, reminds me of chicken satay. I could’ve made half the sauce, lots of leftovers. Good thing it was delicious!!
Simmer 2 cans coconut milk, 1 jar red curry paste, 1 small creamy peanut butter jar, sweet soy, red pepper flakes, and brown sugar to taste. Marinated the meat in the uncooked sauce for 10 minutes. It was such an easy meal. Cooked the meat while the veggies steamed (turn off the heat after 3ish minutes so the texture stays good) and simmered the sauce the whole time.
