Apricot mustard pork chops with broccoli and smashed potatoes

Par boil the potatoes, smash them, and season them. I roasted the potatoes and broccoli at the same time.

The pork chops are so thing I barely get color on them before finishing them in the sauce to prevent overlooking. The sauce is just mustard and apricot jam.

A little garlic butter goes a long way.
