Potato bisque topped with kielbasa and chives. This was as delicious as it was quick and easy! Sauté roughly chopped onion and garlic in a big pot until fragrant. I used bacon grease, but you can use any fat or oil you want! (You could also fry it with actual bacon, then use it as a topping). Meanwhile, chop and rinse some Yukon gold potatoes. Throw them in the pot along with chicken stock until potatoes are covered with stock. Cover the pot and boil until potatoes are tender. Season to taste with onion powder, garlic powder, salt, and pepper. Meanwhile, put about 1/2 cup coconut cream with 1 tsp arrowroot powder into a small bowl and whisk. Stir this mixture into the potato soup to thicken it and make it creamy! Put it all the blender and whir until smooth. Top with bacon, sausage, or anything you want really. Don’t forget the chives!
