Here are the ingredients that you need to make this delicious recipe:

Roasted Potatoes:

  • 2 pounds of quartered red potatoes.
  • Half a cup of pesto basilico (basil pesto).
  • Half a cup of parmesan cheese.
  • Pepper and salt.

Steelhead:

  • One filet of steelhead trout.
  • One cup of basil pesto.
  • Half a cup of parmesan cheese.

 

Instructions

  1. First, set oven temperature to 400 degrees.
  2. After that, add half a cup of prepared basil pesto, half a cup of parmesan cheese, salt, and pepper to quartered potatoes.
  3. Then, arrange the potatoes in a single layer, leaving space between them, on a sheet pan.
  4. Bake potatoes for forty minutes.
  5. After 40 minutes, remove it from oven, and place the steelhead filet, skin side down in the middle of the pan.
  6. Pour a cup of prepared basil pesto over the filet, and then top it with parmesan cheese.
  7. Bake the potatoes and steelhead in the oven for a further 15 minutes.
  8. To crisp the top, broil for one to two minutes. Then, sprinkle with fresh basil and serve.
