Monday meal prep!
Lunches: burrito bowls with rice, chicken, romaine, tomato, corn, cilantro, and sour cream. (I’ll make a video about how easy this chicken is later).
Breakfasts: oikos triple zero Greek yogurt topped with some berries and kindsnacks gluten free peanut butter protein granola. Those cute little containers hold berries on the bottom and granola on top!
A past version of me wouldn’t have allowed myself to have so many carbs. I would have used cauliflower rice and no granola. Now, I’ll enjoy the darn carbs and appreciate them for fueling my body and brain.
