Lunches prepped for the week in 15 minutes flat! Featuring turkey bacon collard wraps with plainvillepoultry turkey breast and fresh greens from thefarmbus. If you’ve never tried collard wraps, they are more nutrient-dense and much sturdier than boring old lettuce wraps. (Although don’t get me wrong, I do love the crunch of a good lettuce wrap). To prep the collards, bring a pot of water to a boil and prep an ice bath right beside it. While the water is boiling, chop your collard greens in half lengthwise to remove the thick stem. Use tongs to pop them in the boiling water to blanch for about 30 seconds, then into the ice bath to cool. Transfer them to a towel to dry, then roll them up and pack them in your lunch. I love my turkey bacon collard wraps with a good drizzle of yellow mustard and primalkitchenfoods avocado mayo. Enjoyed with veggies, an apple, and a flavored seltzer on the side.
