I’ve been putting off this dinner all week since I’ve been out too late to cook each night.
Pork roast
Creamy mashed potatoes
Cast iron gravy
Honey carrots
You can see I went the lazy route and just used baby carrots.
I cooked the roast in the cast iron skillet with simple seasoning and olive oil at 350F for a half hour each side. It was registering at 155 for the thinner part and 138F for the fatty part.
Made the gravy from the drippings
Boiled whole baby gold potatoes, drained them, mashed them.. ended up using a whole stick of butter and heavy cream since I was out of milk. Garlic, salt, pepper, and steak seasoning.
Bumped the oven up to 425 for the carrots, simple seasoning, olive oil, and honey for about 15 minutes.
