Ingredients:
Chicken Marinade-
1 lb. Chicken Breast, cubed
2 Tbsp. Olive Oil
3 Tbsp. Lemon Juice
1 Tbsp. White Wine Vinegar
2 Tbsp. Oregano
1 tsp. Garlic Powder
1/2 tsp. Thyme
1 tsp. Kosher Salt
1/2 tsp. Black Pepper
Greek Cucumber Salad-
2 C. English Cucumber, chopped
1 C. Variety of Cherry Tomatoes, diced
1/2 C. Olives (Kalamata or Black), sliced
1/2 Red Onion, chopped
1/2 C. Feta Cheese
1 Tbsp. Olive Oil
2 Tbsp. White Wine Vinegar
1 tsp. Oregano
1 tsp. Garlic Powder
1/4 tsp. Dill Weed
1 tsp. Kosher Salt
Pepper, to taste
2 C. Quinoa / Brown Rice Blend

Directions:
1. Prepare the chicken & place in ziplock bag. Add in the marinade ingredients and mix well. Marinate for at least 30 minutes, best marinaded for 6-8 hours.
2. To make the Greek Cucumber Salad, add all ingredients into a bowl and mix together well.
3. Remove marinated chicken from fridge to cook. I cooked mine on grill, but could also cook in skillet with olive oil.
4. Prepare the rice as directed.
5. When putting together the bowl, layer rice on bottom, then add about 4 oz. of chicken and add Greek Cucumber Salad. Top with a bit more feta cheese, if desired. Enjoy!!
