Italian sub salads were an instant favorite! I made two for my boyfriend and me for lunch today, and 3 to go for my work lunches this week. It has all the flavors and toppings of a delicious Italian sub without the carbohydrate bomb. Here’s what’s in there: a bed of romaine, tomatoes, black olives, onion, banana peppers, pepperoncini, plainvillepoultry turkey, salami, a drizzle of olive oil and red wine vinegar, salt and pepper, a good sprinkle of oregano, and just a little bit of grated Parmesan on top! Omit the cheese for paleo or whole30, but just a little adds a whole lot of flavor.
