If you like big flavor and clean eating, this blackened adobo lime shrimp with rice and mango avocado salsa may be the perfect meal for you, too! I can’t think of a better way to welcome spring and replenish my body from a good workout. You could easily paleoify it by substituting cauliflower rice. Recipe below 👇🏼





Preheat oven to 400. Toss shrimp in a bit of olive or avocado oil, a generous squeeze of fresh lime juice, adobo seasoning (I used primalpalate) and blackened or cajun seasoning (I used a homemade blend by chowhound). Spread shrimp evenly on a sheet pan and bake for 6-8 minutes. While shrimp is cooking, chop up red onion, avocado, and mango in your desired proportions. Stir in salt, cayenne pepper, cilantro, and fresh lime juice to taste. I used seedsofchange brown and red rice with chia and kale. Microwave rice pouch for 90 seconds, then stir in onion powder, salt and pepper, and dried dill to taste. Stir in a drizzle of olive oil. Devour it all together in one harmonious delicious heap 😋
