If I had to eat one type of food for the rest of my life…it’d hands down be Greek/Mediterranean. I love the bright, bold, fresh flavors and the fact that it’s effortlessly delicious AND nutritious.
One of my favorite ways to meal prep is to grill up a bunch of protein for Sunday dinner and throw the leftovers on salads for the week. My chicken is marinated and ready to throw on the grill as I type this.
The superstar of the marinade and dressing is primalpalate “super gyro” seasoning. (For the dressing, I used olive oil, fresh squeezed lemon juice, and a generous sprinkle of super gyro.)
