Have you ever been asked what you favorite food is? I feel like I have a whole lot of favorite, it’s hard to choose one! But my absolute go-to food, the food I always could not wait to eat after running a half marathon is BURGERS! I recently have been cutting out eating the bun and I actually have been loving burgers even more. I feel like the bun takes away from it! Sharing recipe for these Zucchini Chips paired with my Mushroom Gouda Burger on a bed of Kale!

Ingredients:
1-2 Zucchini, sliced
1 C. Almond Flour
1/2 C. Parmesan Cheese
2 Large Eggs
Garlic Powder, to taste
Salt & Pepper, to taste

Directions:
1. Slice your zucchini into somewhat thick slices.
2. Place the almond flour, Parmesan cheese, garlic, salt, & pepper in a bowl. Mix well.
3. In a separate bowl, crack 2 eggs & mix.
4. Take sliced zucchini, dip in egg, then coat with almond flour mixture well on both sides. Continue process with all slices. (Sprinkle with avocado oil to hold a little better)
5. Move coated slices to air fryer or baking sheet. Cook for 20-25 minutes, or until slightly golden.
6. Serve them with your favorite style burger. Enjoy!!
