Fresh and flavorful Greek pasta salad, minus the pasta!
I came home from vacation to plenty of ripe tomatoes and cucumbers in my garden. As luck would have it, I happen to be CRAVING fresh veggies.
I threw together tomatoes, cucumbers, artichokes, banana peppers, olives, red pepper, feta, olive oil, salt, pepper, garlic, and oregano and some palmini_official hearts of palm lasagna sheets that I chopped up and boiled for 5 minutes to get the pasta texture. Normally, I’d add lemon too, but I’m out and the banana peppers cover the need for acidity well.
