Free-styled some whole30 stuffed peppers for dinner and lunch prep this week, and I’m pretty pleased with how they turned out! 🌶 Made with ground beef, chicken andouille sausage, cauliflower rice, sautéed diced onions and the tops of the peppers, diced green chiles, diced tomatoes, tomato sauce, garlic, and LOTS of flavorgod taco Tuesday seasoning. I made 6 peppers for 6 servings (1 is enough for me per serving), but there was easily enough filling for twice that. A downfall of my recipe free-styling is that I sometimes end up with waaaay too much food. The perk of my free-styling is that I always freeze the extras for a quick and easy meal on a busy night in the future. These bad boys were stuffed with veggies and protein and packed just enough heat. If I hadn’t already had avocado today, I would totally top it with that! Would also be great topped with cilantro and lime.
