Enchiladas
Half vegetarian half chicken and some dairy free for a friend
Rotisserie chicken mixed with homemade chimichurri sauce, enchilada sauce, and cumin.
Vegetarian: cooked carrots in vinegar, chimichurri sauce, red pepper, water, and cumin. Added rinsed carrots and black beans.
(Cheese and olives inside for the dairy version) olives on top for dairy free so I could tell them apart
Warm the sauce and dip the tortillas before filling them. Baked 10 min 350F I topped mine with sour cream and diced avocado with chimichurri sauce (cilantro, garlic, olive oil, vinegar, lime juice, salt, red pepper)
Enchiladas are gluten free and the tortillas are 25 calories
