Easy Couscous Salad Recipe

Pearl couscous, fresh herbs, and a bounty of fresh veggies make up this tasty, crisp, and simple couscous salad. It makes an excellent vegetarian main course or the ideal side dish for any protein. This salad is ideal for summertime because it can be prepared in advance and has substantial vegetables.

When the couscous is still warm, add it to the dressing for the greatest couscous salad. The dressing’s taste is fully absorbed by the warm couscous. You can add the vegetables, walnuts, raisins, and fresh herbs once the couscous has cooled. The salad has a lot of flavor for being so basic!

Ingredients: 

You will need these ingredients to make easy Couscous Salad:

  • One-third cup of dry couscous, commonly known as pearl couscous
  • Both salt and freshly ground black pepper
  • One-fourth cup of extra virgin olive oil
  • One tsp Dijon mustard
  • Half a teaspoon of honey
  • One tsp coarsely shredded lemon zest
  • Two to four tablespoons, depending on taste, of freshly squeezed lemon juice
  • Diced one medium English cucumber
  • One big tomato, chopped
  • Use any mix of fresh parsley, cilantro, basil, dill, or mint in your 1/2 cup of coarsely chopped fresh herbs.
  • 1/4 cup of roasted walnuts chopped and
  • 1/4 cup golden raisins
  • 1/3 cup Italian Dressing

 

Instructions:

  1. Heat a big saucepan of water with salt until it boils. Cook for 8 to 10 minutes, or until the couscous is soft. Empty.
  2. In a big bowl, stir together the oil, mustard, honey, lemon zest, lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper while the couscous cooks.
  3. Mix thoroughly after adding the drained couscous to the dressing.
  4. Add the raisins, walnuts, cucumber, tomato, and herbs and stir.
  5. Check for seasoning and add more salt or pepper if necessary. Eat warm or cover and chill for approximately one hour, or until cool.
  6. Keep leftovers in the fridge for up to five days, or cover if cooking ahead of time.

 

Few Tips:

  • Before combining the cooked and cooled couscous with the salad, prepare it.
  • A delicious bite requires parts of each vegetable to be of a consistent size. For example, you do not want to completely miss the tomato and get a giant chunk of pepper. Thus, consistent, little cutting is excellent.
  • After adding the dressing, taste the salad and adjust the seasonings to your liking. You want to alter this to suit your preferences.
