Chipotle chicken stuffed sweet potato skins inspired by halfbakedharvest! They are packed with flavor and have the PERFECT combination of smoky, spicy, and sweet. Of course, I can’t stick to a recipe to save my own (potato) skin. See what I did there? Yeesh. Okay so here’s how I made these 🔥 little guys. You’ll need: 3 small sweet potatoes, 2 chicken breasts, about 2 cups of spinach, fresh cilantro, a jalapeño, a jar of chipotles in adobo, a lime, garlic, chili powder, onion powder, salt, pepper, olive oil, oregano, adobo seasoning, and some shredded sharp white cheddar. Some good news is that my remix makes this a 30 minute meal! Start by preheating your oven to 400 and washing and greasing up your sweet potatoes. Pop them in the air fryer at 400 for about 20 minutes. Butterfly your chicken breasts and put them in an oiled baking dish. In a bowl, stir up a good drizzle of olive oil, the zest and juice of 1/2 lime, chopped chipotles in adobo according to how much heat you want 🌶 🌶 🌶 , 4 cloves of minced garlic, and all the seasonings-be heavy handed with ‘em, okay!? Pour the contents of the bowl over the chicken and bake for about 20 minutes while the potatoes are going. When the potatoes are done, (soft enough to scoop out pretty easily, but not squishy), cut them in half and scoop out the center, leaving as much potato as you desire. I leave about 1/4 inch and make sweet potato mash or casserole with the leftovers. Position the skins on a greased pan. Grate the cheese and roughly chop the spinach and set both aside. Chop the cilantro and jalapeño and set aside. Take the chicken out, and put the spinach on top so it can wilt while you shred the chicken. Switch the oven to high broil. Stir the mixture well and spoon it into the skins. Really stuff it in there! Top them with jalapeño slices and the grated cheese. Broil for 3-5 minutes or until the cheese is melted and golden. Top with plenty of fresh cilantro and another squeeze of fresh lime. This packs some heat, so a bit of plain Greek yogurt is perfect for dipping! Skip the cheese for whole30/paleo…but I wouldn’t dream of it!
