Chicken mole? Chicken enchilada sauce?
My Great Grandma taught me to make her Chicken mole and she was adamant that garlic does not belong in mole. I cooked the chicken in the instant pot two days before and I definitely put garlic in there.
I also tried to make tortillas, I’m improving but Still need a lot of work. At least they can roll/bend this time 😅
So for the mole or sauce or whatever: make a rue, once the color is to your satisfaction add Chile powder, California chili, and cumin to toast it. I didn’t have tomato paste or sauce so I used enchilada sauce and simmered in chicken stock. I dumped the instapot chicken and contents into the sauce. It was really spicy so I added extra peanut butter and chocolate. I didn’t have any vegetables planned so I drained a can of carrots and added it. Seriously so good. I could eat just carrots and no chicken in this sauce and be happy.
