Castiron chicken night
I got a big package of thighs, used half in the instant pot for some shredded chicken for tacos or something and the other half went to this dish.
I cooked the chicken in the oven at 375 for 40min after searing them skin side down. Then I moved the chicken to the tupperware I’ll store them in later and used one pan juices for the carrots (plus butter and brown sugar) and the other pan for the sauce. I just cooked down some chicken stock in the juices and added mushrooms, spinach, and lemon juice/slices.
