Greek salads or bowls have slipped into our weekly rotation because they are packed with veggies, packed with flavor, and easy to switch up each week to keep things fresh. Pick whatever protein you like, but we prefer grilled chicken or lamb meatballs. Top with a dollop of tzatziki, some Greek vinaigrette, or a drizzle of olive oil and red wine vinegar. Add some rice, cauliflower rice, couscous or quinoa to make it a bowl. But whatever you do, DON’T YOU DARE skip the feta!
