  • Maggi Sauce or Soy Sauce (1/3 cup):
    • Use 1/3 cup of Maggi sauce to enhance the marinade’s umami taste and complexity. It’s a versatile condiment that improves the entire flavor of your cuisine. If you can’t find Maggi, substitute Coconut Amino Acids or Soy Sauce.
  • Brown Sugar (1/3 cup):

  1. In a bowl or zip top bag, whisk together maggi sauce, brown sugar, gochujang, and minced garlic.
  2. Place the salmon fillets in a shallow dish or zip-top bag, and thoroughly coat with marinade.
  3. Give the salmon a minimum of 30 minutes to marinate so that the flavors may seep into the fish. To uniformly coat both sides of the salmon, if using a zip-top bag, fold it in half, skin side up, and turn the bag in the marinade halfway through the marinating period.
  4. Coat the salmon fillets liberally with the marinade and place them in a shallow dish or zip-top bag.
  5. Bake the salmon for about 15 to 20 minutes, or until it flakes easily and is cooked through (140°F), in an oven that has been warmed to 375°F (190°C).
  6. Alternatively, you can grill or smoke the salmon. Preheat your grill to 450°F and cook the salmon directly on the grates for about 20 minutes, or until the salmon’s thickest portion reaches 140°F.
