After yesterday’s post of the whole roasted chicken, did you get to wondering ho…

After yesterday’s post of the whole roasted chicken, did you get to wondering how on earth I’d eat it all?!? Well Chicken Salad is a favorite of mine!! This is a great healthier option to eat it

Ingredients:
Roasted Chicken
Mayo (olive oil)
Dijon Mustard
Fresh Parsley & Dill
Celery, thinly sliced
Black Pepper
Lemon Juice (1/2 of lemon)
Heirloom Tomato

Directions:
1. Shred chicken, depending how it was cooked.
2. Mix in all ingredients, this is all to taste, no measurements. Start with mayo, then half the amount of Dijon mustard. Don’t want it overly creamy consistency.
3. Once thoroughly mixed, prep tomato by slicing top off & gutting the insides out. I usually cut around the edge, then in center to spoon out.
4. Stuff the chicken salad inside & enjoy a delicious lunch!
