Name a summer salad that’s more🔥 than this one. I’ll wait…

Spinach, grilled shrimp, watermelon, cucumber, heirloom tomato, and fresh herbs from my garden (basil, parsley, mint). Annnnnnd, I accidentally discovered my new favorite salad topping today-grilled avocado!

Since I didn’t have fresh cado, I wanted to see if the frozen diced kind (which I usually use for my smoothies), would work. After setting the grilled shrimp aside, I put some of the frozen avocado in the same pan without cleaning it out. Sauté until thawed, then squeeze in some fresh lemon juice. Grill until browned, then season to taste with salt and pepper. It was totally better than regular fresh avocado. You can thank me later!
