Since spring decided to press pause on us here in central VA, I made a big batch of soup to warm us up. My man has a dairy allergy, so I made this batch dairy-free save for the sprinkle on top of my bowl. The secret to its creaminess is a cauliflower head steamed in there. After cooking in the Instapot, put your cauliflower, some of the broth, and a few scoops of potatoes into the blender, purée, and pour it back into the pot for creamy, low or no dairy deliciousness and some extra sneaky veggies!
