Paleo shrimp and “grits” with a cajun ghee sauce rocked my 🧦🧦 tonight! It scored major bonus points for literally being ready in 15 minutes, too! To make 👉🏼 Chop and steam a large head of cauliflower. (You could also used the frozen steam-in-bag kind). While the cauliflower is steaming, put some ghee in a pan. Season the shrimp generously with Cajun seasoning and simmer until cooked through. Back to the cauliflower: Plop some minced squeezable garlic in the pot or bag after steaming. Add a dollop of ghee and pulse it in the food processor until the texture resembles grits. Put the shrimp over the cauliflower grits and spoon some of the ghee sauce over top. Garnish with green onion and an extra sprinkle of the Cajun seasoning. (Recipe slightly modified from 40aprons)
