Nothing beats football on, candles burning, and a big pot of spicy taco soup on a dreary fall day! 🌶 This recipe is a remix of my own with some inspiration from my dear friend laurens2122. I have mine portioned up and ready to go for the cool, busy week. It’s absolutely perfect topped with some fresh avocado, a squeeze of fresh lime, and a few crunched up sietefoods lime tortilla chips. Here’s what’s in it:
1 lb ground turkey
1 lb chorizo
1/2 chopped red bell pepper
1/2 chopped red onion
1/2 chopped orange bell pepper
2 seeded and chopped jalapeños
4 cloves minced garlic
40 oz diced tomatoes with green chiles
8.75 oz can drained corn
Optional: can of drained black beans (we don’t get along, but it probably be good if you’re a bean person)
1 quart chicken or beef stock
4-6 tbsp primalpalate or other taco seasoning
To start, brown the chorizo and turkey in a large pot while you chop the veggies. Drain the meat and set aside. Put a drizzle of olive oil in the pot and soften the garlic, onion, and peppers. Put the meat back in the pot and season generously with taco seasoning. Next, add the tomatoes, corn, and stock. Bring everything to a boil. Add more taco seasoning until you’ve reached the desired flavor.
