Shrimp boil…it’s a whole mood. It’s easy, filling, and delicious too! This recipe makes enough to feed four-or feed 2 with leftovers. All you need is 1 pound of raw tail-on shrimp (I use half of a thawed freezer Costco bag), 1 package or 5 links of andouille sausage (I use the chicken sausage from lidlus. See my insta story), 3-4 ears of corn, a bag of baby potatoes, a lil butter, garlic, and olive oil, and your choice of seasonings. Preheat oven to 400 and bring a large pot of salted water to a boil. While everything is heating up, roughly chop the potatoes in halves or thirds, chop the sausage, and chop each ear of corn into thirds or fourths. Parboil the potatoes alone for about 10 minutes, then throw the corn in and boil both for about 5 mins. In a separate pan, brown the sausage. Pat the shrimp dry and put it in a large mixing bowl so the sausage, corn and potatoes. In a smaller microwave safe bowl, melt 1-4 tablespoons of butter (depending on how buttery you want it. I did about 1 1/2 to keep it light. You could use ghee or just skip the butter and stick with olive oil only). Add your seasonings directly to your melted butter. I did a TON of flavorgod Cajun Lovers seasoning, villagegardenrva chili salt, parsley paste, minced garlic, smoked paprika, and cayenne powder. You could also use oldbay_seasoning. It will look a bit like a paste at this point, so drizzle olive oil and stir until you have more of a liquid. Pour this slowly over the large bowl of goodness while mixing with your hand until everything is coated just enough! Spread the mixture out onto two large baking sheets lined with parchment. Top with some extra smoked paprika and fresh chopped or dried parsley. Bake for 15 minutes or until shrimp is pink. I added some fresh lemon wedges to squeeze over at the end and served it up with a salad. (Peep my plate on the second photo.) We put the sheet pan right on the table and ate as we went. The other pan went into a container for lunch tomorrow!
